Dressing

  • 1/3 cup olive oil

  • 1/4 cup red wine vinegar

  • 2 tablespoons freshly squeezed lemon juice

  • 1 1/2 teaspoons dried Italian seasoning

  • 1 large garlic clove, minced

  • salt and freshly ground black pepper to taste

Salad

  • 1 (15.5-ounce) can cannellini beans, drained and rinsed

  • 1 (15.5-ounce) can garbanzo beans, drained and rinsed

  • 1 cup mozzarella pearls

  • 2/3 cup chopped red bell pepper

  • 1/3 cup chopped red onion

  • 1/3 cup chopped pepperoncini

  • 1/3 cup thinly sliced salami

  • 1/3 cup thinly sliced hot capicola (optional)

  • 1/3 cup thinly sliced fresh basil

Directions

  • Whisk together olive oil, red wine vinegar, lemon juice, Italian seasoning, garlic, salt, and pepper in a small bowl; set dressing aside.


  • Combine cannellini beans, garbanzos, mozzarella pearls, red bell pepper, red onion, pepperoncini, salami, capicola, and basil in a large bowl. Pour dressing over salad, toss until well combined. Flavor improves with refrigeration.
