While football fans sit glued to the television on Super Bowl Sunday, those in the know understand the real appeal of the grand event: the snack spread. What other day can you make an entire meal of appetizers, chips and dip, and bite-sized munchies? We might not even care who is playing if we have the right food on our plates. For us, Buffalo sauce on everything and irresistible sweet treats are what we’re rooting for.

So as we gear up for recipe touchdowns this year, we’re checking in on some of our favorite football recipes of all time. Take, for instance, or most-saved appetizer for the Super Bowl: Buffalo Cauliflower.

Why We Love Buffalo Cauliflower

Wings get most of the attention when it comes to Buffalo-flavored apps—and we’ll be cooking those up too—but cauliflower makes for an equally hearty bite that is a perfect vehicle for that signature spicy, tangy sauce we know and love. Because this recipe for Buffalo cauliflower is baked, you don’t have to worry about the mess of frying, making cleanup a breeze. The florets get nicely cooked to golden perfection thanks to a high oven temperature, and they are light enough to pop a whole plateful while enjoying the halftime show.

As the recipe creator, ddmama says, "This Buffalo cauliflower is a great substitution for Buffalo wings and can be made gluten-free, vegan, or vegetarian. Make sure to coat your cookie sheet well with oil, or the cauliflower will stick."

We’ll start there. Preheat your oven to 450 degrees F (230 degrees C) and grease your baking sheet with cooking spray. Some reviewers have suggested using parchment paper to help prevent sticking, too.

Prepare the easy batter by combining water, flour, garlic powder, salt, and pepper in a large bowl until it is smooth and somewhat runny. You can use either gluten-free flour like the recipe lists or all-purpose flour. Note: If using AP flour, you may need a little more liquid to get the right consistency.

Next, toss bite-sized cauliflower florets into the batter to evenly coat, and spread them onto the prepared baking sheet. Bake until evenly browned, 20 to 25 minutes.

Meanwhile, make the Buffalo sauce by melting butter in a saucepan and stirring in hot pepper sauce (like Frank’s) and honey. Brush this mixture over the cauliflower pieces after their first trip to the oven, then stick them back in to finish cooking and crisping up, about 10 more minutes. Cool a bit before digging in, if you can wait that long!

Many users also commented that they used an air fryer instead of the oven to make their Buffalo bites.

Though we haven’t tested this ourselves, one helpful idea comes from Allrecipes user Pauline who put her own spin on the dish: “I added the hot sauce & honey to the batter (skipped the butter) and roasted the florets at 450 for about 13 minutes. Sheer greatness! The batter stuck to the pieces well and cooked up just right.”

Serve the Buffalo cauliflower with cut-up veggies like carrots and celery, and a dipping sauce like ranch or blue cheese—or just enjoy them on their own along with your other football goodies.
