As chef Wolfgang Puck said, “You can eat an omelet at midnight, at lunchtime, all day long. It’s perfect for every occasion.” We agree. An omelet is delicious any time of day—but it’s not the simplest thing to make—especially if you’re going for the perfect French version. 

Fortunately, an omelet doesn’t have to be perfect to enjoy, nor does it have to be the light, fluffy French dish that culinary students must master. There are many ways to make the quick egg dish that are less fussy yet equally delicious. And if you have some leftover rice, you can make one that’s crunchy rather than fluffy. 

Perhaps some omelet purists may shy away from rice in their omelet, but a recent TikTok video from kalejunkie makes us want to whip up some rice just to have some left over for an omelet that would definitely be perfect for midnight, lunchtime, breakfast, dinner, or any time you’re hungry.

How To Make a Crispy Rice Omelet

An omelet can simply be salted whisked eggs cooked in butter, or it can have several ingredients in it including cheese, vegetables, meat, and herbs. Rice is not usually one of those ingredients, but when added to the mix, it creates an omelette that’s crispy on the outside. 

For one crispy rice omelet, Nicole K. Modic, the voice behind kalejunkie TikTok account, uses:

  • 1 teaspoon chili oil (if you aren’t using chili oil, you may want to add olive oil or butter to the pan you know it’s truly nonstick)
  • 1/2 cup cooked rice 
  • 2 whisked eggs
  • ¼ cup grated Parmesan cheese
  • 1 green onion 

She begins by drizzling the chili oil on a non-stick pan heated to medium-hot and then adding a layer of cooked rice on top, pressing it down to cover the entire bottom of the pan. The rice made a thin layer and she then poured two whisked eggs on top. She cooked that for 3 to 4 minutes to allow it to develop a crispy crust. Then she added her fillings—Parmesan cheese and green onions—allowed the omelet to cook through, and folded it over. The dish only took about 10 minutes. 

To make your own version of a crispy rice omelette, you’ll need the rice and eggs, but the rest of the ingredients can be of your choosing. You can skip the chili oil. You can switch up the cheese or add none at all. You can fill your omelette with bacon or sausage or go untraditional with cooked ground beef, cheese, tomatoes, onions, and ketchup and make a cheeseburger-inspired crispy omelette.

The possibilities are endless both in ingredients and when you can serve this crispy version of a quick, classic meal.
