Original recipe (1X) yields 16 servings

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 1/4 cup stout beer

  • 1 cup whole milk, or more as needed

  • 1 teaspoon Dijon mustard

  • 4 ounces shredded sharp Cheddar cheese (4 ounce)

  • 1 (4-ounce) jar chopped pimentos, drained (1/3 cup)

  • pinch of salt

  • pinch of black pepper

Directions

  • Melt butter in a small saucepan over medium-low heat. Gradually whisk in flour; cook, whisking constantly, until a thick paste forms, about 1 minute. Whisk in beer until combined. Gradually whisk in milk and mustard.


  • Bring to a simmer, whisking frequently. Reduce heat to low and cook until thickened, about 5 minutes. Gradually whisk in cheese until melted. If needed, add more milk, 1 teaspoon at a time, to reach desired consistency. Whisk in pimentos, salt, and pepper.
