Bread is not allowed during the week of Passover, but matzo happens to be a great substitute for that morning toast or nut butter snack before a workout. Yet, sometimes you don’t finish the whole matzo box in time, or you get tired of just smearing something on a slice as is. You can actually use matzo in a variety of fun, delicious recipes that are more creative and help you make the most of your supply—and they’re not all matzo balls. Here are a few other recipes to use up leftover matzo.

How simple is this? It's basically just matzo covered with chocolate, but it makes for the perfect dessert and sweet snack. Use brown sugar to add a bit of sweetness to it or go with salt for that sweet-salty balance. Get creative with toppings, like crumbled nuts or toffee.

You can still enjoy Italian night without the bread rolls, pasta, and pizza when you have matzo. This recipe still has the same great cheesiness and tomato sauce flavors you want in lasagna, and it's an easy way to make the most of that leftover matzo. Whole matzo boards are used in place of the noodles.

”This matzo ball soup recipe is the one my grandmother always made," says May Gerstle. ”The matzo balls are perfect! It is our family's favorite Passover dish and serves a lot of people. Make sure to not add too much matzo meal in order to make the matzo balls float to the top of the boiling chicken broth.”

“This is a Passover-friendly take on a breakfast noodle kugel!” says recipe developer Liv Dansky. ”We often eat kugel with raisins and cinnamon. I chose to use raisins, dried apples, and dried apricots. Kugels are usually very dense and have a ton of sour cream and cottage cheese/cream cheese in them. I added just a bit of sour cream to keep things a bit lighter.”
