Don’t let anyone tell you that two-ingredient cakes cannot be done. The recipe for two-ingredient angel food cake couldn’t be more simple. Plus, it’s so easy to remember that you barely need to write down the recipe.

It starts with boxed angel food cake mix. It’s important to reach for a boxed cake mix that specifies “angel food cake” for that quintessential sugary-sweet flavor. While you could, if you wanted, use another flavor or variety, this mix is specially formulated with just the right amount of powdered egg whites to emulate the light, airy, spongey-yet-moist crumb of angel food.

The trick is using canned crushed pineapple, which provides just the right amount of liquid that you need to achieve the right cake batter texture. But more importantly, it contains enzymes that naturally break down proteins present in flour for an extra-tender crumb. The citric acid present in canned pineapple also assists the cake in stabilizing. Most cake mixes contain this citric acid as well, but canned pineapple adds a little extra stability, ensuring a beautifully even crumb.
