Shopping at Costco can be an hours-long affair, and once you’re home and have put away your money-saving haul, do you really want to cook dinner? Sure, you have tons of ingredients to do so, but do you feel like doing it? Probably not.

That’s where Costco’s prepared meals come in clutch. If you pick up one of these ready-made staples, dinner is already covered. And some of these meals are legendary, from a fan-favorite chicken dish to a grandma-approved combo. 

These meals come and go, leaving fans in anticipation of their return. But now, a beloved dinner classic is finally back in the deli section.

Costco’s Kirkland Signature Rotisserie Chicken Enchilada

Say hello (again) to the Kirkland Signature Rotisserie Chicken Enchilada. Costco’s chicken enchilada bake is full of rotisserie chicken, black beans, pinto beans, bell peppers, cheddar cheese, cilantro, and chipotle sauce. The dish serves nine people and costs around $30, as, like other heat-and-eat meals, it’s priced by weight. Typically, we see this pricing around $6-7 per pound, but it does vary by region. 

Instagram’s @costcohotfinds recently bought it, tried it, and said the easy weeknight meal was “so good.” To prepare, they covered it and baked it for about 50 minutes.

It’s a complete meal, but one commenter suggested making Spanish rice to complement the dish. Ice cream brand Helados Mexico jumped in the conversation and suggested a “trip to the [Costco] freezer aisle for paletas for dessert.”

As for the dish itself, one person summed up how good they think it is with an Austin Powers-esque enthusiasm. “Get in my belly,” they exclaimed. Another fan said, “We love this dish!!” and several others called the chicken enchilada bake “delicious.”

The exact tray that @costcohotfinds bought was just shy of four pounds and cost $23.84, which comes out to about $2.65 per serving. And that’s definitely less expensive than ordering in or going out to dinner after your Costco run.
